Yes you are right!! Pineapple and carrot in a cake!!

This time round, natures goodness and yummy treat goes down your throat not on your skin. We appreciate your love for our skin loving serums, soaps, oils, creams but we are going to try something different today and have fun while at it. Shall we? Healthy skin is the true beauty and we love blending nature into our formulations. We draw a lot of happiness from being closer to our cherished clients and what better way to do this  other than baking this yummy cake and sharing the recipe with you. Ooh my! Its so rich, delicious, aromatic with caramel, pineapple, carrot toppings. You definitely want to try this!!!

Inspired by our best seller Moringa hair serum, a magical hair oil, powered by amazing oils from the very beautiful fields of Africa. This recipe is one of Ruvies creation made with love in our kitchen. We love it!! You will love it too.

Serves: 10 – 12

Prep Time: 30 minutes

Cook Time: 45 minutes

Total time: 1 hour 15 minutes

Ingredients

For the toppings

Pineapple 550g

1 piece carrot (cut into thick rings)

¼ cup (4tbsp) butter

¾ cup brown sugar

For the cake 

2 cups grated carrots.

1 cup sugar

3 eggs lightly beaten

2 cups flour

¾ cups vegetable oil

2 tsp mixed spices

1 tsp ground cinnamon

1 tsp bicarbonate of soda

1 tsp baking powder

Method

Melt the butter and the brown sugar in a cooking pan until well caramelised.

Pour the caramel in a baking tin and place the pineapples and carrots at the bottom of the pan and set aside.

Place shredded carrots, and sugar in a bowl.

Add combined eggs and oil

Blend in flour, spices, bicarbonate of soda and baking powder and fold in gently.

Pour the batter on the baking tin with the pineapples and spread evenly.

Bake for 180C for 45 minutes.

Notes:

If you want to bake a gluten free cake, you can substitute the flour with sweet potato,oat, cassava or any other gluten free flour of your choice.

The carrots can also be substituted with green or red maraschino cherries.
